Vettu Cake Recipe | Tea Kadai Muttakos | Tea Stall Fried Cake | Fried Tea Cake | Vedi Cake

I am super excited to share today's recipe and I have many memories around this fried cake. In Tirunelveli district, the fried cake is made as a big round shaped ball with few cracks and people call it as Muttakos (cabbage) since the shape of this resembles the cabbage. The same cake is called as Vettu Cake in Kanyakumari District and Kerala. They make it a bit small and have a cross in the centre. Most of the roadside tea shop will sell this along with Medhu Vada, Parippu Vada, Samosa and Pazham Pori.
My mum was working at a School in Tisayanvillai and I did my schooling there until grade 10. We had a neighbour who makes this Muttakos(Vettu Cake) and Mini Samosas. He supplies it to all the nearby tea shops and some days we buy it from him for our evening snacks. It tastes so yummy and at times mum will make it at home. The original recipe calls for maida and my mum makes it with wheat flour. Today I am sharing the original recipe with maida and you can always replace it with wheat flour for the healthier option. When I posted the Traditional Christmas Fruit Cake last year, many of you mailed me asking for the eggless and non-alcoholic version. As promised, I am sharing the easy peasy eggless fruit cake soaked in orange juice. If you forget to soak the dry fruits, then no worries, this recipe requires only one-day soaking. I followed the recipe from here and it came out super awesome. I packed the cake to Jany's office and his teammates really loved it. When most of the World has the cold weather, in Australia, we are in the summer season. We are enjoying loads of mangoes now and I have tried few mango recipes to make use of the season. Recently, I tried this mango loaf cake and it came out so delicious. I used fresh mango pulp for this loaf and in your part of the world, if it is not the mango season, then you can use tinned mango pulp. I followed the recipe from here and it turns super awesome. I am planning to post few Christmas special recipes on the blog and today I am sharing a yummy starter for the Christmas party. I love KFC Popcorn chicken a lot and though it is unhealthy, I indulge in it once in a while. Making soft chapathi is everyone's dream and so am I. Though I have not mastered making the perfect round chapathis, I have managed to make soft chapathi. When I was living in Saidapet with my in-laws, a cook who comes there makes perfect chapathis. Once I saw her making the dough and she asked me to insert my finger into the dough to check the consistency. It was so smooth and my finger went inside without much effort. From that day, I was dreaming to make such dough. Also, when I was working with TCS Chennai, I had a helper Kalpana who makes similar chapathi. Happy loves her chapathi and asks for more whenever she makes it. I learned tricks from both of them and now I am able to make reasonably good chapathi. Egg rice has so many nostalgic memories of my childhood. I was a very fuzzy and picky eater during my school days. Mom struggled to pack lunch for me since I bring back home almost everything untouched. I don't prefer rice mixed with any Kuzhambu and also hate almost all the vegetables. Egg rice was my mom's saviour since I finish this if it is in my lunch box. Initially,  I will not allow her to add mustard seeds, onion and it should be a plain rice with egg and salt. I have so many childhood memories related to today's recipe, Ulli Theeyal. My maternal grandmom makes the best ulli theeyal and mum makes it once in a while following her recipe. My grandmother was a school teacher and she uses two kitchens for her day to day cooking. She uses the traditional log wood stove for making rice and the gas stove kitchen for making other dishes. During her busy morning hours, while getting ready to school she runs between two kitchens and finishes all her cooking in style.Once she asked my uncle John about the curry he wants for lunch. He teased her and told a rhyming answer "Thulli Thulli oru Ulli Theeyal". (meaning: jump between the kitchens and make an Ulli Theeyal). Happy Vinayagar Chathurthi to all my friends, readers and their families. Today, I am sharing Therali Ilai Kozhukattai as my last recipe for this year's Kozhukattai collection. It is one of my mum's favorites and she makes it very often at home. In the place where my mum was working, for Karthigai Deepam, all my neighbors share us kozhukattai prepared using palm leaves. And, mum shares with them this Therali Kozhukattai. I can recollect many cherishable memories of mum if I think about this kozhukattai. It is very famous in my native since the tree with therali Ilai/Bay leaf is readily available in many houses. I prepared and clicked it during my last India trip at Jany's house since they have a very big tree in the backyard.
The strong smell of the fresh bay leaf enters into the kozhukattai/appam while steaming and gives great flavor to the kozhukattai. The house smells divine after we make this kozhukattai. My mum-inlaw helped me while making this kozhukattai and it came out super awesome. Both uncle and aunty liked it very much. I don't prefer cakes with so much of icing and I like mildly sweet plain cakes. Also, I  love banana flavoured bread, cake and muffin. For one of the Christmas during my college days, Paneer Anna brought a banana cake from a far away bakery. That is the first time, I tasted a banana cake and it tastes so delicious. Paneer Anna drives our car in native and he is a very close family friend. Hence, whenever I visit native, he will try to bring me that cake. After I started baking, I had tried Eggless Banana Walnut Muffin and Banana Bread. I was thinking about trying some whole wheat cake recipes when my sister in- law started asking about it. To my rescue Hari Chandana posted this recipe on her Instagram and I bookmarked the recipe.
In Happy's school, teachers involve kids in some kinds of cooking or baking once in a week. She loves that very much and after seeing that interest, I involve her whenever I make play dough. Recently, she was asking me to make a cake along with her. Since I was very busy arranging the new house, I couldn't bake any. Finally, two days back I tried this recipe along with Happy and it came out very well. She was very excited about the outcome and she wanted to eat one soon after it is out of the oven. Moong Dal Tadka Recipe| Simple Dal Tadka | Dal Tadka with Moong Dal

Dal(paruppu) with steamed rice and a dash of ghee is a match made in heaven. It goes very well with potato fry, arbi fry, fish fry and chicken 65. Do check out my already posted Nagercoil based Paruppu curry and Kerala special Parippu curry. When I am very lazy and prefer to eat something good then this quick dal tadka came to my rescue. In my school days, I always force mum to make cauliflower recipes since it was my favourite during those days. The cauliflower recipes that I prefer changes over time. When I was in the hostel, we friends order Gobi Manchurian and Gobi 65 from a nearby hotel. After marriage, I always make Egg Dipped Cauliflower or Gobi Masala dosa since Jany prefers it that way. Now, for Happy, I make this Gobi 65 since she prefers it this way. This can also be served as a starter for Kids party and they will enjoy it. We were moving to another suburb in Sydney and I was completely occupied. Hence, you could not see any new posts from me. Now, we have settled in the new house and I hope to continue blogging. Today I am sharing a recipe of Kadachakka and it is one of the favourites from my native. Jany's house has Kadachakka tree in their backyard and my mom-inlaw makes yummy thoran with that.  I have already posted her recipe of Kadachakka thoran. During my recent India trip, we visited Jany's aunt and she served us this bhaji. It was so tasty and I asked her the recipe immediately. After I returned to Sydney, I saw breadfruit quite a few times in Udhaya. It really tempted me to buy and I bought one. I prepared bajji with half and chips with the remaining. Radish Sambhar Recipe | Mullangi Sambhar | Sambhar Recipe for Rice

Jany loves Sambhar very much and especially he likes the Capsicum Sambhar. I always try to explore different sambhar recipes. Once my friend, Florence was sharing her lunch scene with radish sambhar. It reminded my hostel days and I almost forgot this sambhar until I saw her photo. I was very much tempted to try it and I was waiting for the availability of white radish in the market. However, I was able to find only the pink radish and I end up making with it. There is no compromise in the taste and it turned out super yummy.
