Fried rice is one of my childhood favourites and I prefer it more when compared to Biryani. Also, since mum doesn't make Prawns often at home, I order prawn fried rice in most of my restaurant visits. Now, Happy shows much interest in Fried rice/Pulao and Noodles. Hence, I make some kinds of fried rice for our lunch often. Do check out the fried rice varieties that I have posted already on the blog. (Mushroom Fried Rice, Chicken Fried Rice, Vegetable Fried Rice and Peas Pulao). Let us move on to today's recipe:
Ingredients:
Basmathi Rice - 1 Cup
Egg - 2
Soya Sauce - 1 tbsp
Chilli Sauce - 1 tsp
Tomato Sauce - 1 tsp
Salt - as required
Pepper powder - as required
Oil - 1 tbsp
Ginger - 1 tsp(chopped finely)
Garlic - 1 tsp(chopped finely)
Onion(chopped) - 1/2 Cup
Vegetables Used: (I have chopped the below veggies lengthwise)
Cabbage - 1/4 Cup
Beans - 1/4 Cup
Carrot - 1/4 Cup
Capsicum - 1/4 Cup
1. Follow any one of the recipes linked in the ingredients list and fry the prawn. (check notes). Keep it aside. Soak the basmati rice for half an hour in water. Pressure cook it with 1.5 cups of water for 2 whistles. Spread it on a plate and allow it to cool completely. Chop all the required veggies.
2. In a wide pan, add the oil and roast the ginger and garlic. Then add the chopped onions and a little salt. When the onion turns transparent, add the chopped veggies. Cook the veggies for 5 to 7 mins.
3. Now, push the cooked veggies to one side and crack open the egg. Add the required salt and pepper. After a minute, start scrambling the egg. After the egg gets cooked, add the chilli sauce and tomato sauce.

4. Turn the flame to high and add the soy sauce. Mix it all together and after 2 to 3 minutes, add the cooled rice.
5. Carefully mix it all together without breaking the rice grains. Finally, add the fried prawns and give a quick mix. Adjust the salt, pepper and switch off the flame.
Serve the yummy fried rice with tomato ketchup and any spicy curry of your choice.

- If you don't prefer cooking the rice in a pressure cooker, then you can cook it in an open pot and drain the rice.
- For the prawn fry, if you don't prefer any of the recipe mentioned above, then you can just marinate the prawns with chilli powder, turmeric powder, ginger garlic paste and salt. Leave it for 15 mins and then deep fry it or shallow fry it with a little oil.
- Any preferred veggies of your choice can be included. If you don't prefer egg, then you can skip it.
