Chicken fried rice is a one pot meal which includes egg, veggies and chicken. You can alter the recipe according to your preference. I usually make Chinese chicken fried rice by adding Soya sauce and other sauces. Once my neighbour gave us chicken fried rice which tastes equally good as mine. But it highlights the unique Indian taste of pepper, fennel and cumin. I got the recipe from her and I tried it yesterday. It was a big hit and she was excited since I made justice to her recipe. Here, we go for the Indian Style Chicken Fried rice:
Ingredients:Basmathi Rice - 1.5 Cups
Chicken 65 - 1 Cup(Torn into pieces)

Eggs - 3
Carrot - 1/4 Cup(Chopped length wise)
Beans - 1/4 Cup(Chopped finely)
Capsicum - 1/4 Cup (Chopped length wise)
Cabbage - 1/4 Cup (Chopped finely)
Big Onion - 1( Chopped finely)
Garlic - 5 Cloves(Chopped finely)
Green Chilli - 2(Chopped finely)
Oil - 2 tbsp
Salt - as requiredCoriander leaves - to garnish
To Powder:
Pepper Corn - 1 tbsp
Fennel Seeds(Sombu) - 1 tbsp
Cumin Seeds - 1 tsp
Method:
1. Soak the rice for 15 mins and in a wide pan or vessel add enough water and bring it to rolling boil. Then wash and add the soaked rice. Half cook the rice and drain it in a colander. Allow the rice to cool completely.
2. Meanwhile powder the items under 'To powder' to a fine powder. In a pan add oil and saute the chopped garlic, onion until the onions turn transparent.
3. Now add the powdered masala and fry it in oil for few mins in low flame. Then break open the eggs and scramble it. Now add the carrot, beans and cook it in medium flame.

4. Then add the capsicum, green chilli, cabbage and sauté everything together for few mins. The vegetable should be crunchy, so don't over cook. The add the chicken 65 pieces and give a quick stir.
5. Finally, add the rice and gently mix it with the masala in high flame for 3 to 4 mins and switch off the flame. Take care not to break the rice.
The pepper and fennel seeds gives nice flavour to the rice. The crunchy veggies and the fried chicken pieces add extra punch to the fried rice. Serve it with tomato sauce and relish in the taste of fried rice.

- The secret ingredients for the recipe is the powdered pepper corns, fennel seeds and cumin seeds. So use it more than we use in our normal cooking.
- You can skip few veggies if you don't prefer it in chicken fried rice.
- Adding fried chicken enhances the taste, but you can add cooked chicken as well. Pressure cook it with little salt, pepper powder and tear it into pieces and add it to the fried rice.
- Vegetarians can skip the egg and chicken to make veg fried rice. Include fresh peas as well. It tastes equally good.
- Adjust the pepper corns and green chilli as per your spice tolerance.
