Today I am here to share another simple thoran for Onam Sadya. Jany doesn't like to eat the carrot if it is cooked. So, we eat raw carrots and I rarely make carrot thoran/poriyal at home. Last week, just for the sake of posting it here, I prepared it. Both Happy and I liked it very much. I am planning to make it often for both of us. Ingredients:Carrot - 2
Onion - 1/4 Cup(chopped finely)
Salt - as required
To Grind:
Coconut - 1/4 Cup
Jeera - 1/2 tsp
Green Chilli - 2
To Temper:
Coconut Oil - 1 tsp
Mustard - 1/2 tsp
Curry leaves - few
Method:
1. Grind the items under 'To Grind' to a coarse mixture without adding water. Wash and grate the carrots. Chop the onions finely.
2. In a pan, add the coconut oil and allow the mustard seeds, curry leaves to crackle. Then add the chopped onion and saute until it is translucent. Next, add the grated carrot and cook for 3 to 4 mins by sprinkling few drops of water. Add the required salt at this stage. Finally, add the ground coconut mixture and mix it all together.
3. Saute it in low flame until the raw smell of the coconut leaves. Switch off the flame.

Serve the healthy thoran with rice and any curry of your choice. I served it with steamed rice & Parippu curry.
- Instead of grating, you can also chop the carrots into fine pieces.
- Make sure not to overcook the carrots.
- Adjust the coconut and spiciness as per your need.
