One day I was just browsing through my recipe index and I found it has very few recipes based out of Egg. Though I try different recipes with egg more often, I have not posted all that I have tried. So when I was in Chennai, I clicked few common egg dishes which I make in my home. This week I will try to post all the egg dishes I have captured one by one. I have already posted the following recipes:
Ingredients:Hard Boiled Eggs - 4
Oil - 1.5 tbsp
For the Masala:
Besan Flour(Kadala Maavu) - 1.5 tbsp
Chilli Powder - 1 tsp
Turmeric powder - 1/4 tsp
Pepper Powder - 1/2 tsp
Salt - as required
Lemon - 1/2
Ginger garlic paste - 1/2 tsp
Method:
1. Boil the eggs for 10 mins and allow it to cool completely. Remove the outer shell and slice it into halves. In a plate, mix all the items under 'For the masala' to a smooth paste. Add little water if required.
2. Then coat the sliced egg halves with the prepared masala. Allow it to rest for 10 to 15 mins. In a shallow pan, add the oil and shallow fry the eggs.Once the bottom is golden brown, flip and fry the other side too. The egg splutters a lot, so fry it carefully. Remove it and drain it in a kitchen towel.
The yummy Egg fry is ready to be served. It goes well with Sambhar and Rice. I served it along with cabbage poriyal too.

Points to remember:
- The besan flour gives nice taste and flavour to the egg fry. Hence don't skip it.
- The masala paste should not be watery. it should be thick, so that it coats well.
- While shallow frying, the masla in the egg splutters. If required, cover it with a lid while frying. Make sure you fry it carefully.
- Adjust the spicines as per your taste buds. It is little spicy for us, but it tastes heavenly good.
