I am not a big fan of Soups; however, I wanted to try a variety of soups at home since Jany likes it. I usually make Chicken Soup and have not tried anything else. When I was preparing some green gram recipes for an event last year, I made this. It came out super tasty and it was lying in my drafts for such a long time now. I am planning to try more soup recipes this year and without much delay, let's see this recipe today:
Ingredients:Tomato - 3
Big Onion - 1/2
Carrot - 1(small)
Garlic - 2 cloves
Red Chilli Flakes - 1 tsp
Crushed Black Pepper - as required
Salt - as required
Fresh Cream - 1/4 Cup
Cooked Green Gram - 1/4 Cup(Optional)
To Temper:
Olive oil - 1 tsp
Bay leaf - 1
Cloves - 1
Cinnamon Stick - 1/2 inch piece
Method:
1. Chop the onion, tomato and carrot roughly. In a pan, add the oil and temper it with the items under 'To Temper'. Then add the chopped onion and carrot. Saute it for 3 to 5 mins in medium flame.
2. Now, add the chopped tomato and garlic cloves. Along with this add the red chilli flakes and required salt. Mix it all together and cook until the tomato turns mushy.
3. When the tomato turns mushy, add two cups of water and bring everything to boil. Allow it to boil for 7 to 10 minutes in medium flame and switch off the flame. Remove and discard the bay leaf, cinnamon stick and cloves. Allow it to cool completely and blend it in a blender. Strain it once with big hole strainer, to remove any leftover big pieces.
2. Now, add the chopped tomato and garlic cloves. Along with this add the red chilli flakes and required salt. Mix it all together and cook until the tomato turns mushy.
3. When the tomato turns mushy, add two cups of water and bring everything to boil. Allow it to boil for 7 to 10 minutes in medium flame and switch off the flame. Remove and discard the bay leaf, cinnamon stick and cloves. Allow it to cool completely and blend it in a blender. Strain it once with big hole strainer, to remove any leftover big pieces.
4. Transfer it back to the pan and heat it. Now add the fresh cream along with this and keep whisking it for a minute.(otherwise, it will curdle). If using cooked green gram, add it at this stage and switch off the flame.
- To get the dark red colour soup, add a small piece of beetroot along with the carrot. It will not change the taste of the soup and hence you can add it.
- Freshly cracked pepper gives a nice flavour to the soup.
- Make sure not to strain through the fine hole strainer since we needed the pulp. If you blend it smoothly then it is not required to strain.
- Adding green gram is purely optional and I prefer it for extra protein. You can add any variety of cooked beans as per your choice.
- Make sure to cool it completely before blending and use a big jar for blending it in the mixie.
