Oats Raisins Walnut Cookies | Christmas special Recipes

This December I am planning to post some baked goodies. This recipe is from chef Joe Francis of Gateway International Hotel. He taught me few recipes and this is the first one I tried from that list. It came out really well and special thanks to Joe for this wonderful and simple recipe. Let's go for the step by step preparation.

Butter - 200 gms 
Sugar - 200 gms ( I have used brown sugar 80 gms and Normal sugar - 120 gms) 
Eggs - 2 
Oats - 150 gms 
Maida - 100 gms 
Baking Powder - 1/2 tsp 
Cinnamon Powder - 1 tsp 
Raisin - 100 gms 
Walnut -100 gms 
Salt - a pinch
1. Bring all the ingredients to room temperature. In a large wide bowl, cream the butter, sugar and eggs together.
2. In another bowl mix the maida, raisin, oats, cinnamon, walnut and salt. Now mix the dry ingredients with the butter, sugar, egg mixture. Refrigerate for 30 mins.
3. In a baking tray line the butter paper and place the cookie dough roughly. Preheat the oven at 170 deg celsius and bake it for 18 - 20 mins
The Yummy crispy and crunchy cookies are ready to be served with evening coffee.
Points to remember:
  • The cookies will be very soft as soon as it is out of the oven. But after it cools completely it turns crispy
  • The temperature and baking time varies between ovens
  • If using normal sugar, roughly powder it.
