Chocolate Cupcake | Chocolate Cupcake with Whipped cream frosting | Christmas Special Recipes

Cupcakes may come in many flavours, but the chocolate cupcakes are still everyone's favourite. It's my dream come true to make cupcakes decorated with frosting and sprinkles. Since we don't prefer butter cream frosting, I tried it with whipped cream. The cakes turned out to be super spongy and looks adorable. Though the decorations I made are not professional, we loved it.  This is one of the best holiday dessert in this festive season. Let's go for the preparation steps:
Ingredients: 
(I halved the below measurements - Got 6 Cup Cakes)
Cocoa powder - 30 grams
Boiling hot water - 240 ml
Maida - 175 grams
Baking powder - 2 tsp
Salt - 1/4 Cup
Unsalted butter(room temperature) - 113 grams
Granulated white sugar - 200 grams
Eggs - 2
Vanilla extract - 2 tsp
Whipped cream Frosting:
Whipped Cream - 1 Cup
Food Color - Any color of your choice
Sprinkles
Method:
1. Stir the Cocoa powder in hot boiling water and allow it to cool completely. Whisk together the flour, baking powder and salt.
2. Beat the butter and sugar until light and fluffy. Now add the egg and beat until it is smooth. Beat in the vanilla extract.
3. Add the flour mixture and mix well until it is incorporated. (Missed to click). Then add the cocoa mixture and stir until smooth. Line the cupcake pan with paper liners.
4. Fill each liner until it is 3/4th full. Preheat the oven @190 degree celcius and bake it  for 15 to 20 mins. The cake is done if a tooth pick inserted comes out clean. Mix the whipped cream with food color and frost it with using any tip of your choice. And decorate it with sprinkles.
The chocolate cupcake with whipped cream frosting tastes yum. Enjoy the easy to make cupcakes in this festive season.
Points to remember:
  • The original recipe calls for 50 gms of cocoa powder. My cocoa is very strong, hence I have reduced it to 30 gms. 
  • Cool the cupcakes completely before frosting. Otherwise it will whipped cream will start melting.
  • You can use any frosting of your preference.
