I am planning to post few Christmas special recipes on the blog and today I am sharing a yummy starter for the Christmas party. I love KFC Popcorn chicken a lot and though it is unhealthy, I indulge in it once in a while. I always wanted to recreate it at home. After I tried Chicken Chippies, I was confident enough to try this one. It tastes so yummy and Jany told, it tastes similar to KFC popcorn chicken. This can be served as an appetizer for the kids' party as well and kids will love it. Without any delay let's see the recipe. Ingredients:Boneless Chicken(thigh or breast fillet) - 250 grams
Panko Bread Crumbs - 1/2 Cup(See Notes)
Corn Flour - 1/4 Cup
Egg - 1
Oil - To deep fry
To Marinate:
Butter Milk - 1 cup
Garlic Powder - 1 tsp or Ginger Garlic paste - 1 tsp
Pepper - 1.5 tsp
Mixed Herbs - 1 tsp
Salt - as required
1. Cut the boneless chicken into tiny bite-sized pieces. Marinate the Chicken with the items under 'To Marinate'. Leave it aside at least for 45 mins to 1 hr. You can also refrigerate the marinated items overnight and fry it the next day. To get juicy and tender chicken bites it is preferred to soak in buttermilk for more hours.
2. When the marinated chicken is ready, heat oil in a Kadai for frying. Coat the chicken in the flour, followed by beaten egg and then in breadcrumbs.
3. You can rest the coated chicken in the fridge for 5 to 10 mins before frying so that the breadcrumbs stick well. However, this step is optional. Deep fry the coated chicken in medium flame until it turns golden brown.

- I have used panko breadcrumbs and it gives the same outer layer(texture) like the KFC popcorn chicken. If you couldn't find it, then use normal breadcrumbs. Panko breadcrumbs are coarsely ground white bread without crusts and the flakes are large when compared to the regular breadcrumbs. You can dry roast the white bread until crispy and coarsely grind it to get the texture similar to panko breadcrumbs.
- Any Italian seasoning can be used instead of the mixed herbs.
- If you want it to be spicier then add red chilli flakes as well.
