I have reached a milestone today, yes!! it's my 25th post. Wish me good luck for the upcoming posts. And today's post is Cucumber pachadi. This is one of the tasty side dish in Kerala cuisine. It is also a common side dish which we often make in our hometown. The vegetarian wedding lunch of our place mainly includes Aviyal and Cucumber Pachadi in their menu. The main flavor of the Pachadi comes from the coconut and the sour yogurt.

Ingredients:Cucumber - 2 small
Curd - 1/4 cup
Salt - as required
To grind:
Coconut - 1/4 cup
Green Chilli - 2
Cumin seeds(Jeera) - 1 tsp
To temper:
Oil - 1 tsp
Mustard - 1/2 tsp
Dry Red Chilli - 1 or 2
Curry leaves - 1 sprig
Method:
1. Cut the cucumber into small pieces. Grind the coconut, Jeera and green chilli to a smooth paste. Cook the cucumber by adding little water and salt.
2. Once the cucumber is half cooked ( becomes soft), add the ground coconut mixture to it and heat it on low flame.
3. In a tadka pan, add some oil and allow the mustard , red chilli and curry leaves to crackle.

4. Pour the tempered items into the pachadi and allow it to cool completely. After it is cooled add the curd into this and mix well.
Tasty refreshing Pachadi is ready to be served with Steamed rice and any curry.
Points to remember:

- Don't mix the curd before the pachadi cools completely.
- Cook the cucumber until it is soft and don't mash it while mixing coconut.
