Egg Podimas is one of the easy to make poriyal for rice which we can make in a jiffy. Whenever I ran out of vegetables, I make this egg podimas to accompany rasam rice. Sometimes I pair the egg podimas with Channa Masala and rice, which is a yum combo as well. Please check out my other Egg recipes mentioned below:

Ingredients:Eggs - 4
Onion - 2(medium sized)
Green Chilli - 2
Ginger - 1 tsp(chopped finely)
Turmeric powder - 1/4 tsp
Pepper Powder - 1/2 tsp
Salt - as required
To Temper:
Oil - 1 tblsp(gingelly oil)
Mustard seeds - 1/2 tsp
Curry leaves - a sprig
Method:
1. Chop the onions and the green chilli finely. In a pan, add the oil and heat it. Allow the mustard seeds and curry leaves to crackle. Then add the chopped onion. You can add a little salt for the onion to cook faster.
2. When the onion turns transparent, add the turmeric powder, chopped green chilli and ginger. Break open the eggs in a bowl and whisk it well.
3. Add the pepper powder and the required salt to the whisked egg. Now, move the onion mixture towards an end of the pan and pour the whisked eggs. Cook it for a minute.

4. Then start scrambling the eggs with the spatula. When the egg is completely scrambled and dried, mix it with the onion mixture. When everything is well combined and the raw smell of the egg leaves, switch off the flame.
Serve the yummy and delicious Podimas with rice and any curry of your choice. Serve it soon after it is prepared for best results.

- For kids, you can skip the green chilli and replace it completely with black pepper powder.
- More the onion, better the taste to the podimas. So don't compromise on the onion if you prefer to get crunchy podimas.
- If required, you can scramble the eggs separately in a pan and mix it with the onion mixture.
- You can also add veggies likes beans, peas or carrot.
