My mom sometimes packs this coconut rice for lunch box during school days along with masala omelette. Jany is not interested in coconut rice and for blogging Navarathiri recipes, I prepared it today for Happy and me. We really enjoyed this mild flavored rice. Let's go for the simple and easy to make recipe.

Ingredients:Cooked Rice - 1 Cup
Coconut - 1/2 Cup (grated)
To Temper:
Oil - 1 tbsp
Ghee - 1 tbsp
Mustard - 1 tsp
Curry Leaves - few
Urad Dal - 1 tbsp
Cashew nuts (Broken) - 2 tbsp
Red Chilli - 1 or 2
Asafoetida - a pinch
Salt - as required
Method:
1. Cook the rice with 1:2 water ratio for 3 to 4 whistles and spread it on a plate. In a pan add oil and ghee, then allow the mustard and curry leaves to crackle. Along with this add the dry red chillies, urad dal and cashews. Saute it for few mins and then add the grated coconut.
2. Once the raw smell of the coconut leaves, add the required salt, asafoetida and give it a mix. Finally, add the cooked rice and mix well to combine. Garnish with ghee fried cashews.
Serve it with pappadam and any side dish of your choice. I served it with Beetroot stir fry and Masala Omelette.

- Instead of dry red chilli, you can use green chilli too.
- Don't roast the coconut until it is brown, just heat it for 3 to 4 mins.
