Good Bye 2017!! Thanks everyone for the support you have given me throughout the year. Though I am not posting regularly this year, I received enough encouragements from many readers on my Facebook and Instagram Pages. I will be sharing more interesting recipes in the coming year. To wind up 2017, today I am sharing a simple and easy idiyappam variety, the Vella Sevai. This can be served as an after-school snack for kids and they will enjoy it. Check out the already posted Puli Sevai and Paruppu Sevai. Let's move to the preparation steps:
Ingredients:
Powdered Jaggery - 1/2 Cup
Grated Coconut - 1/2 Cup
Crushed Cardamom - 1/2 tsp
Ghee - 1 tsp
Cashew Nuts - 10
Method:
1. If preparing the Idiyappam at home(click the link for recipe), make it in advance and allow it to cool completely. If using store bought, prepare it as per the instructions on the pack and drain the water completely. In a bowl, add the powdered jaggery and water to immerse the jaggery. When the jaggery dissolves completely, strain and remove if there are any impurities. In a pan, add the ghee and roast the cashew nuts until golden brown. Remove and keep it aside.
2. In the same pan, add the jaggery solution and bring it to boil. When it thickens, add the crushed cardamom and grated coconut. Mix it all together.
3. Add the ghee roasted cashew nuts and switch off the flame when it thickens. Now, add the prepared sevai/idiyappam and mix until it combines.

Serve the yummy sevai for breakfast. It goes well with any savoury sevai like Puli Idiyappam or Paruppu Sevai.
- If you are using very thin Idiyappam then it might become mushy while mixing. I suggest you use idiyappam press with little big holes. If using ready-made sevai, then drain the water completely after soaking in hot water.
- You can refrigerate the jaggery syrup for few weeks in the fridge and use it when required.
- You can also add ghee roasted raisins.
