Yet another weekend, and with so many to-do items in hand I am composing this post. Hopefully I should experiment few new recipes. Whenever I show my new clicks to my team mates, they give me a weird looks and say: "We don't want images and instead we need to taste it". At least this Monday, I should take something to my team :)
Even though we cook non veg items more often in our home, my blog has very limited items, hence I am planning to post more non veg items in the future. Last Friday, I made this chicken sandwich for our breakfast, it really turned out well. Though it was a working day, I managed to click for posting it here. Here we go for the recipe.
Ingredients:
To pressure cook:
Boneless Chicken - 250 grams
Salt - as required
Pepper powder - 1/2 tsp
For the filling:
Fennel seeds - 1/4 tsp
Onion - 1
Tomato - 1(small)
Ginger garlic paste - 1/2 tsp
Green chilli - 1 (chopped finely)
Chilli Powder - 1 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 1/4 tsp(Optional)
Oil - as required
Coriander leaves - few
Mint leaves - few
Salt - as required
Method:
1. Cut the boneless chicken into small pieces. Pressure cook the Chicken with pepper powder and salt. Leave it aside until pressure releases. Then allow it to cool and shred the chicken.
2. Meanwhile chop tomato, onion, green chilli. In a pan add some oil, allow the fennel seeds to crackle.
3. Along with this add the onion and saute for few mins.(Can add little salt for the onion to cook faster). Then add the tomato,ginger garlic paste, green chilli,coriander leaves and mint leaves. Saute everything until it mashes well. Then add the Chilli powder, turmeric powder and very little coriander powder.

Saute everything until it mashes well. Then add the Chilli powder, turmeric powder and very little coriander powder.
4. Finally add the shredded chicken and stir until everything mixes well. If it is very dry, sprinkle few drops of water and stir well. Switch off the flame when everything combines completely.
5. Place a slice of bread in a plate and add enough amount of chicken filling on top of it and then close it with another bread slice. Toast it by adding ghee either in Dosa tava or sandwich maker. I toasted it in my sandwich maker until crispy.

Serve it hot with tomato sauce. We had this yummy chicken sandwich as our breakfast along with Mango juice, it was very filling. You can serve it as evening snack for kids.

- If you don't prefer tomato, you can skip it.
- You can sprinkle little more pepper powder and add few drops of oil towards the end before switching off the flame.
- The filling can be made in the previous night and can be refrigerated. So we can make the sandwich in a jiffy the next day.
