I am a regular visitor of Joy of baking. Whenever I visit that website, I badly wanted to try Doughnuts. My first trial for the doughnuts was a failure because of the yeast I used. And, finally this weekend I succeeded making these tasty doughnuts. These are so yummy, I bet you can't eat just one. I have tried the yeast raised and deep fried version of preparing doughnuts. I will also try to post the baked version.
Ingredients:All Purpose Flour(Maida) - 1 cup
Active dry yeast - 1 tsp
Egg - 1
Milk - 1/4 cup(heated to lukewarm)
Butter - 1 and 1/2 tbsp (Unsalted)
Sugar - 1 and 1/2 tbsp
Salt- 1/4 tsp
Butter
For the Chocolate glazing:
Butter
Dark chocolate pieces
Method:
1. Proof the yeast as per the instructions in the package, before you begin making the dough.
2. The Yeast will be active when mixed with a warm liquid. So mix it with warm milk and allow it to dissolve completely. Then mix the flour, egg, sugar, salt and butter along with this yeast mixture. Bring everything together by adding milk and form a ball of dough. Cover the dough with a wet cloth and allow it to rise in warm place for 50 - 60 mins. It will be almost doubled in size.
3. Transfer to the lightly floured surface and punch it to release the air. Then knead the dough until it is smooth and elastic. You can add more flour if it is sticky.
4. Now with the rolling pin, flatten the dough and cut the dough as shown in the image below, using a doughnut cutter or cookie cutter. If using cookie cutters, a small one is required for the hole.

5. Allow the shaped doughnuts to rise for about 15 mins before frying. Heat the oil and once it is hot enough slide the doughnuts. Once it rises to the top, flip and fry the other side till it is golden brown. Drain it in tissue paper to remove excess oil.
6. For the chocolate glazing, Microwave the butter and chopped chocolate pieces for 1 min in high. Mix it well after 30 Sec and then microwave it again. Mix well to remove lumps, can add a little milk if it is required. You can also melt the butter and chocolate in double boiler method.
7. Dip the doughnuts into the chocolate and allow it is cool and set for few mins. Then decorate it with edible sprinkles of your choice. Instead of chocolate glazing, you can also roll it in sugar when it is hot.
These doughnuts taste good when it is served fresh. You can also refrigerate for 2 days. While serving from the fridge microwave for 30 secs and then serve.
Points to remember:
- If your yeast is not active, don't continue the preparations until you get a new yeast.
- The sugar used in the recipe seems to be less, but when we have the doughnuts with the chocolate glazing it tastes good. If you really need, can add a teaspoon more sugar.
