Cabbage thoran/ Cabbage stir fry | Onam Sadya Recipe

In Kerala, any vegetable made using coconut, shallots, cumin and green chilli is called as thoran. Cabbage thoran is one of the dishes on Onam Sadya lists and it goes well with Parippu curry and sambar. The method of preparation for this thoran is little different from my usual cabbage stir fry and it's very easy to make. Here, we go for the detailed cabbage thoran steps.

Ingredients:
Cabbage - 1 cup (finely chopped or grated)
Coconut - 1/4cup(grated)or (5 pieces- ground coarsely)
Green Chilli - 2
Cumin Seeds - 1 tsp
Shallots - 6 to 7(Chopped finely)
Turmeric powder - 1/4 tsp
Salt - as required
To Temper:
Coconut Oil
Mustard Seeds
Curry leaves
Method:
1. Chop or grate the cabbage finely. Chop the shallots and green chilli. In a wide mixing bowl add the cabbage, grated coconut, chopped shallots, green chillies, turmeric powder, cumin seeds, salt and mix well. Leave it aside for 10 mins. Cabbage will let out some water by this time.
2. In a pan, add the coconut oil and allow the mustard, curry leaves to crackle. Then add the cabbage mixture and stir it to combine with the oil. Simmer the flame, cover with the lid and allow to cook for 10 - 12 mins. Make sure the bottom is not getting burned. (Cooking in very low flame on a non stick pan is sufficient)
The cabbage thoran is ready to be served with sambhar and steamed rice.

Points to remember:
  • Do not add water while cooking the cabbage, it will make the cabbage soggy.
