Carrot Halwa Recipe/Gajar ka halwa| Diwali Special Recipes

This is the dessert I often order, whenever I visit a restaurant. I love to have the warm carrot halwa with a scoop of vanilla icecream on top. It is a yumm combo. When I was thinking about diwali sweets, the first thing that comes to mind is Gajar ka halwa. Since I had a pack of icecream in my freezer, I readily started to prepare it two days back. We enjoyed the carrot halwa with icecream. Do give it a try this diwali. 

Carrot (grated) - 3 cups
Milk - 2 Cups
Sugar - 1/2 cup
Cashews(Broken) - 1 tbsp
Cardamom powder - a pinch
Ghee - 2 tbsp
1. Peel the skin and grate the carrot. Measure it after grating and keep it aside. In a wide non stick pan, add a tblsp of ghee and fry the cashews until golden brown. Remove it and keep aside for later use. In the remaining ghee, saute the carrot until the raw smell leaves.
2.Once it starts to shrink, add the milk and allow it to boil. After it boils, allow the carrot to cook in medium flame by stirring occasionaly.Scrap the sides now and then. Add the sugar after it is almost cooked.
3. Now it starts to thicken, stir continously. Add a tblsp of ghee at this stage. When the halwa starts to roll leaving the sides of the pan, add the fried cashews and switch off the flame.
Serve the halwa either chilled or warm with a scoop of vanilla icecream. Jany loves to have the halwa chilled.

Points to remember:
  • Adjust the sugar as per your preference. 
  • Add the sugar after the raw smell of  carrot leaves and after it is almost cooked.
