Yet another traditional and popular delicacy from 'God's Own Country'. I tried this pradhaman long back, when dad brought a very big Jackfruit from my hometown :). I reserved some jackfruit pieces for this Pradhaman and some for jackfruit jam which I will be posting soon. Being from nagercoil, I grew eating chakka from my childhood days. This is one of my favourite fruits. This is the first time I am trying a recipe with this. I got this recipe from my dad's friend's wife. She is very lovable and explains both the pradhaman and Jam very cleary. Here we go for the recipe:
Ingredients:Jackfruit - 10 Pieces
Thick coconut milk - 1 Cup
Jagerry - 1/4 Cup
Ghee - 1 tbsp
Cashews - few
Raisins - few
Coconut pieces - few(chopped into small pieces)
Method:
1. Pressure cook the Jackfruit with little water for 3 to 4 whistles. Once is it cool, gring it smoothly in a mixer
2. Meanwhile add ghee in a pan and fry the cashwes, raisins and coconut bits individually. Keep it aside.
3. Dissolve the jaggery in hot water and strain it to remove impurities. Bring the jaggery water to boil. After it starts boiling add the jackfruit paste. Mix it well, finally add the thick coconut milk and switch off the flame in a minute.
2. Meanwhile add ghee in a pan and fry the cashwes, raisins and coconut bits individually. Keep it aside.
4. Garnish it with fried cashews, raisins and coconut bits.
Enjoy the delicious payasam when it is slightly warm.
