I usually make sambhar, Coconut Chutney, Tomato Chutney and Vada curry as the side dish for Idli/Dosa. I don't have many options other than this. So thought of exploring it more and I also wanted to post many chutney recipes in this space. This kara chutney can be prepared in a jiffy. Let's see the recipe:
Ingredients:
To Grind:Shallots(Small Onion) - 20 to 25
Tomato - 1
Garlic - 3 to 4 Cloves
Tamarind - a small piece
Red Chilli - 5
Salt - as required
To Temper:
Oil - 2 tsp(Gingelly Oil)
Mustard - 1/2 tsp
Urad dhal - 1/2 tsp
Curry leaves - few
Method:
1. Grind all the items under 'To grind' to a smooth paste. In a pan, add oil and allow the mustard seeds to crackle. Then add the urad dal. After it turns golden brown, add the curry leaves.
2. Then add the ground chutney paste to this and cook it in medium flame. Cook until the oil separates and chutney start thickening. Give a quick stir and switch off the flame.
Serve it with steamed hot idli. It goes well with Dosa and kara Kuzhi paniyaram as well.
- You can adjust the spiciness as per your tolerance level
- You can sauté everything with little oil and then grind it. But I prefer to prepare my kara chutney in this procedure.
- Use very little quantity tamarind ,otherwise it will depress the spiciness.
