I have bookmarked many recipes from Vijay Tv's Samayal Samayal show by Chef Venkatesh Bhat. I like all his recipes and I am not getting sufficient time to try many recipes. Today's post is one among them and it is an easy one pot meal. This Biryani has loads of veggies in it to make it a healthy, delicious meal and it goes well with Boondi raita or onion raita. Happy and I love anything made using Semiya. Since Jany doesn't show much interest towards it, I make it once in a while. I have already posted few recipes with semiya, please check that too. They are Vegetable semiya Upma, Semiya Kesari and Semiya Payasam. Let us move on to the preparation steps:
Ingredients:Semiya/Vermicelli - 1 packet(I used Anil Semiya)
Mixed Veggies - 1 cup(I used cauliflower, carrot, beans, potato and peas)
Onion - 1(sliced lengthwise)
Tomato - 1(medium sized)
Green Chilli - 2(slitted)
Ginger garlic paste - 1 tsp
Chilli Powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 1/2 tsp
Salt - as required
Curd - 1 tbsp
To Temper:
Oil - 1 tsp
Ghee - 1 tsp
Bay leaf - 1
Cloves - 2
Cinnamon - 1 inch piece
Cardamom - 2
Star anise - 1
To Garnish:
Ghee - 2 tsp
Coriander leaves - 1 tbsp(chopped finely)
Method:
1. In a wide bottomed vessel cook the semiya/vermicelli by adding a little salt, oil and enough water. Cook the semiya until it is soft and drain the water. Spread it in a wide plate and allow it to cool. Meanwhile, heat the oil and ghee.
2. Then add the other items mentioned under 'To temper' and fry it for a minute. Along with this add the chopped onions and green chilli. When the onions are half cooked, add the ginger garlic paste and stir it continuously.
3. Now add the chopped tomatoes and the chopped veggies of your choice. Mix it all together and saute it for another 2 to 3 minutes. Then add the chilli powder, turmeric powder, coriander powder and required salt.
2. Then add the other items mentioned under 'To temper' and fry it for a minute. Along with this add the chopped onions and green chilli. When the onions are half cooked, add the ginger garlic paste and stir it continuously.
3. Now add the chopped tomatoes and the chopped veggies of your choice. Mix it all together and saute it for another 2 to 3 minutes. Then add the chilli powder, turmeric powder, coriander powder and required salt.
4. When the raw smell of the masala leaves, add the curd and mix it once. Add 1/2 cup water to cook the veggies. Cook until it is soft and the water is drained completely. Switch off the flame. Now layer the cooked semiya on top of this vegetable masala.
5. Garnish it with chopped coriander leaves and ghee. Close the pan tightly and transfer the pan on top of the hot dosa kal/pan to dum cook it. Cook it for another 10 mins in low flame and switch off the flame.
While serving, mix everything together without breaking the semiya. Serve it with onion raita or any raita of your choice. Check out my Boondhi raita too.
5. Garnish it with chopped coriander leaves and ghee. Close the pan tightly and transfer the pan on top of the hot dosa kal/pan to dum cook it. Cook it for another 10 mins in low flame and switch off the flame.

- You can also add other vegetables like broccoli, cabbage, capsicum, mushroom and corn. You can decide the combination of veggies as per your preference and availability. On busy days, you can even skip the veggies.
- You can replace the vegetables with 3 to 4 scrambled eggs if you prefer egg semiya biryani.
