Because of the sudden change in the Sydney weather, I was down with flu and cold for the past few days. Hence, I was not able to post anything on the blog and I did a very minimal cooking as well. Today's post is a simple and healthy sandwich, which we can make it for our morning breakfast. The sandwich can be served with any smoothie, boiled egg and fruits for a filling and healthy weekday breakfast. I made this mushroom spinach sandwich with white sauce and hence it is a little heavy and cheesy. If you don't prefer white sauce, then you can add the sauteed veggies alone as the filling. Let us move on to the recipe. Check out the below-listed sandwiches too and plan your breakfast.
Ingredients:Whole Wheat Bread - 6 Slices
Butter - to toast
For the filling:
Butter - 1/2 tsp
Onion - 1/2 Cup(chopped)
Mushroom - 5
Spinach - 1 Cup(chopped)
Salt - as required
Black Pepper Powder - as required
For the White Sauce:
Butter - 1/2 tbsp
Flour(Maida) - 1 tbsp
Milk - 3/4 Cup
Grated Cheese - 1/4 Cup
Method:
1. Chop the onion, mushroom and the spinach finely. In a pan, add 1/2 tsp butter and saute the chopped onion.
2. When the onion turns transparent, add the mushroom and cook it covered for 4 to 5 mins in low flame. Then add the chopped spinach and saute it for 2 to 3 mins. Add the required salt and pepper.
3. Switch off the flame and start the preparation of white sauce. In a pan, melt the butter and add the flour. Reduce the flame to low and allow the flour to cook by stirring it.(Make sure the flour is not getting burned)
4.Now, add the milk and stir well until no lumps are formed. When the milk starts to thicken, add the grated cheese.

5. After the cheese is melted completely, add the prepared spinach and mushroom filling. Adjust the salt and pepper if required. Trim the edges of the bread and place the filling on the bread.
6. Cover each slice with another slice of bread and grill it using the sandwich maker or you can toast it in stove top on a tava. Apply required butter while toasting. Slice it into triangles and serve.
Serve the yummy and filling sandwich when it is warm.

- If you prefer the sandwich is a little heavy, then you can skip the cheese. But cheese goes very well with mushroom and gives a creamy sandwich.
- Mushroom and spinach cook very fast and hence you can prepare the white sauce at the same time in another burner.
- Adjust the butter as per your need.
