Monthly once I make egg noodles or chicken noodles or veg noodles in my home for dinner along with a spicy non veg side dish. But I missed to post it here, so I will be posting it one by one. This is a simple and easy to make recipe. This is a kid friendly recipe and they will love it. Though it is not healthy, occasionally it is fine to serve them. Here, we go for the recipe:
Ingredients:Hakka Noodles(Chinese) - 1 packet
Eggs - 3
Olive Oil - 1 tbsp
Garlic - 5 cloves(Chopped finely)
Capsicum - 1 (medium sized)
Carrot - 1(Big sized)
Onion - 1
Pepper powder - 1/2 tsp
Salt - as required
Soya Sauce - 1 tsp
Green Chilli Sauce - 1 tblsp
Method:
1. Boil water(should be enough for the noodles to immerse) and add the hakka noodles. Along with this add 1/2 tsp oil and required salt. Cook it by constant stirring. Once it is cooked, strain it from the water and it aside. Chop the onions, capsicum, carrot lengthwise.
2. In a pan, add some oil and saute the garlic and sliced onions. Then add the sliced carrot and capsicum. The vegetables should not be over cooked. It should be crunchy.
3. Once the veggies are half cooked, move it towards the one and of the pan. In the other end, crack open the eggs and add required salt. Scramble the eggs as shown below. Then add soya sauce, chilli sauce and pepper powder. Adjust required salt and mix everything together.

4. Finally, add the cooked hakka noodles and mix everything together. Switch off the flame.
Serve the noodles with any spicy non veg curry of your choice. I served it with Chicken Masala.

- Apart from the vegetables mentioned here, you can add green peas, cabbage, cauliflower, broccoli, spring onion and beans. The veggies should be crunchy
- Tomato sauce and red chilli sauce can be added for the bright red noodles. But I prefered it to be white.
- While boiling the noodles, oil is added to prevent the noodles from sticking together.
