Boondi Raita is one of our recent addiction at home and we are pairing almost everything with this delicious raita. I was tempted to buy a pack of boondi when I visited the nearby Indian shop. I got this recipe from the back side of the boondi pack. Since I had all the ingredients handy, I immediately made this to go with Aloo Paratha. It was super awesome and Jany started to eat the raita separately. So, I thought of posting the recipe here too and I finished the entire pack by making raita few times. Ingredients:Boondi - 1/2 cup (check the link for homemade boondi)
Greek Yogurt/ thick Curd - 1.5 cups
Chilli Powder - 1/2 tsp
Roasted cumin powder/Chat Masala - 1/2 tsp
Salt - as required
Coriander leaves - chopped finely(to garnish)
Method:
1. Keep all the ingredients ready. Whisk the yogurt/curd until it is smooth and free flowing. Add required salt. Then mix in the chilli powder and roasted cumin powder. Finally, mix the boondhi and garnish it with chopped coriander leaves.
The delicious raita is ready to be served with biryani, pulao or stuffed paratha. I served it with veg pulao and fried fish.

- If you want crunchy boondi in the raita, then mix the boondi just 10 mins before serving. But the soaked/soggy raita too tastes equally good.
- The boondi will absorb more yugurt /curd hence adjust the boondi and curd accordingly, to get the prefered raita consistency.
- This goes well with any kind of biriyani, Pulao or stuffed paratha.
