Once I was talking to my friend Angavai and I just asked her about the calcium rich food items since Happy is not very much fond of Milk. Immediately she told me about the Sesame seeds/Ellu which is a good source of calcium. So, I was googling about the recipes with it and this Ellu Sadam caught my attention which is very simple and easy to make for our usual working day lunch box. She gave me the recipe of ellu chutney too which I will be posting it soon. Already I have Sesame Seeds Ball (Ellu Urundai) and Sweet Sesame Seeds Dumplings (Ellu Poorna Kozhukattai) in this space, please check that too.
Ingredients:Cooked Rice - 3 Cups
Salt - As Required
To Roast & Grind:
Black or white sesame seeds - 1/4 Cup
Gingelly oil - 1 tsp
Urad Dal - 1 tbspRed chilli - 2
To Temper:
Gingelly Oil - 1 tbspMustard - 3/4 tspChanna dal - 1 tspCumin Seeds - 1/2 tspAsafoetida - a pinchCurry leaves - few
Method:
1. Heat a pan and dry roast the sesame seeds until golden brown in very low flame. Allow it to cool. In another pan add the gingelly oil, roast the urad dal and dry red chilli. Once it is cooled, transfer it to a blender and grind it to a coarse powder.
2. Along with the ground coarse powder, add the roasted sesame seeds. Pulse it again until the powder is coarse.
3. Now temper with the items under 'To Temper'. Add required Ellu podi(Powder) to the cooked rice and add the tempered items along with the oil. Add required salt and give it a gentle mix. Take care not to break the rice grains.
- I used white sesame seeds, you can also add black sesame seeds. Make sure not to burn the seeds while roasting. Also, the sesame seed pops a lot while roasting. Don't panic.
- Gingelly oil gives a nice flavour to the rice. You can also drizzle few drops of ghee before serving.
- Based on your spice preference, you can increase or decrease the dry red chilli for the podi.
- You can prepare and store the Ellu Powder in bulk. So that you can prepare this rice in a jiffy.
