I usually buy Baby Potato whenever I see it in Kovai Pazhamudiyir Nilayam since I wanted to post many recipes with it. But I never click anything that I try. Finally, few months back I tried this simple and easy to make roast recipe. Even though it tasted good, everyone had the feeling that the masala didn't enter inside. So next time I pricked the baby potato with fork roughly and followed the same process. This time we liked it very much and here I am with that recipe:
Ingredients:Baby Potato - 20 to 25
Asafoetida - a generous pinch
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
To Roast & Grind:
Bengal Gram(Kadalai Paruppu) - 1 tsp
Urad Dal - 1 tsp
Cumin Seeds - 1 tsp
Dry Red Chilli - 2
To Temper:
Oil - 1 tbsp
Mustard - 1 tsp
Curry Leaves - few
Method:
1. Wash and pressure cook the baby potatoes for 2 to 3 whistles. Allow it to cool and peel of the skin. Prick the baby potatoes with a fork roughly.(So that masala enters inside). Roast the items under 'To Roast & Grind' in a low flame, until it turns light golden brown color.
2. Allow it to cool completely and grind it to a smooth powder. In a pan, add some oil and allow the mustard seeds and curry leaves to crackle.
3. Then simmer the flame and add asafoetida. After it starts foaming, add the chilli, turmeric, coriander powder and the ground masala powder. Take care not to burn anything, just roast it for few mins. Finally add the cooked potato and toss it well with the masala. Allow it to cook for 6 to 8 mins until the poatoes are coated with the masala powder. Switch of the flame and serve.
Serve it with steamed rice, Sambhar, Paruppu Curry or Rasam. I served it with Paruppu curry and mango pachadi.
- I suggest you to prick the potato, so that the masala enters into it.
- You can prick the potato and marinate it with the masala powders(chilli, turmeric,coriander and ground masala). Allow it to rest for 20 minutes. Then saute it in oil after tempering.
- Adding asafoetida helps in digestion. So use it generously.
