Aamras is a popular dessert or sweet in North India and it is usually paired with Poori. I know, it is an unusual combination for South Indians since we always prefer potato masala(Poori Masala) along with poori. However, we can try this yum combo once in a while and kids will love this for sure. This is a very simple recipe, where the pureed mango is sweetened with sugar and flavoured with cardamom or saffron. Though it is not mango season here in Sydney, we can always see some variety of mangoes in the shops. Mango is one of my favourite fruits and hence I grab it once in a while. Last month when Jany had team lunch, I was very lazy to cook something elaborate for Happy and me. So, I made this simple Aamras poori for us and clicked it too :). Let us see the method of preparation:
Ingredients:Mango - 1(use any ripe mango)
Sugar - 1 tbsp or as required
Cardamom powder - 2
Method:
1. Peel the skin of the mango. Take the fleshy part in the blender and discard the seed. Along with this add the sugar.
2. Add the whole cardamom or powdered cardamom(1/4 tsp). Blend it all together to a smooth paste. Based on the required consistency, you can add few tbsp of milk or water while grinding. Since my mango is very juicy, I have not added anything.
Serve it immediately with warm fluffy pooris.

- Instead of cardamom, you can use few strands of saffron for flavoring.
- Adjust the sugar quantity, based on the sweetness of the mango. Choose the mango that is not fibrous for the perfect aamras texture.
- Adding, milk while grinding gives creamy aamras. If preferred, use it as per required aamras consistency.
