Today's post is about Aval Kesari. Apart from rava kesari, I have never heard about any other type of kesari until I started this blog. Blogging world has taught me so many yummy dishes and this is one among them. I have already posted Aval Payasam, which is one my popular posts. This Aval Kesari is an easy to make recipe that we can make it in a jiffy. Let's see the steps involved:
Ingredients:Aval(Poha) - 1/2 cup
Sugar - 1/2 cup(I have used little less than this)
Ghee - 3 tblsp
Water - 1 cup
Orange food colour -a small pinch
Cardamom powder - 1 tsp
Cashew nut - 5 to 10
Raisins - 10
Method:
1. In a pan add ghee and roast the cashews, raisins. Remove it and keep it aside. In the same pan roast the Aval/Poha in remaining ghee for 2 to 3 minutes until nice aroma comes. Powder it coarsely like rava.
2. In a pan add the water and bring it to boil. When it starts boiling add the powdered Aval/Poha and cook it in medium flame. Stir continuously and cook until it turns soft and water is absorbed completely.
3. Now add the sugar and food color. Mix everything together in low flame. Add ghee at regular intervals.
4. When the kesari starts leaving the side of the pan, add the cardamom powder and roasted cashews, raisins. Switch off the flame.
Serve it warm. This goes very well with the morning breakfast Idli/Dosa and Vada.

- Add more ghee if required and that is the main ingredient for this kesari.
- The Kesari thickens when it is cooling, so switch off the flame accordingly.
- Instead of cardamom, you can mix few saffron strands in warm milk and add it.
