I thank God, the Almighty for giving us a peaceful and blessed year. The year 2015 went well for us with so many good memories and fun. We are ready to welcome the new year with same hope and prayers. I wish everyone a Happy New Year. May the new year brings Joy, Peace and Happiness to you and your entire family. To end this year with a sweet post, I had reserved this in my drafts for more than three months now. I love marshmallows and I introduced it to Happy when we were in Paris. Though it doesn't have any health benefits, I prefer to munch few :). I reserved few to try this recipe and here I am with this yummy and super quick fudge recipe:
Ingredients:White Chocolate Bar - 200 gms
Chocolate Chips - 200 gms
Peanut Butter - 100 gms
Mini Marshmallows - 1 Cup
Peanuts - 1/2 Cup
Method:
1. Roast the peanuts and peel the skin. In a microwavable mixing bowl, add the white chocolate, chocolate chips and peanut butter. To melt, microwave it in high for 30 secs.
2. Remove it from the oven and stir it. Microwave again for 30 secs and stir it again. Repeat this until the chocolate melts completely. Then add the peanuts and mix it gently.
3. Mix half of the marshmallows with this chocolate mixture. Grease a pan with little butter and spread the remaining marshmallows evenly. On top of this pour the prepared chocolate mixture. Tap it once for the chocolate to spread evenly.

4. Then put it in the freezer for about 2 to 4 hours for the fudge to set.
Once the fudge is set completely, remove and slice it into squares and serve. Yummy treat for kids is ready.

- Peanut Butter, Choco chips and Chocolate bars are readily available in Indian Supermarkets. I got it in Nilgiris. If you couldn't find marshmallow, skip it. I got it from France during my last visit.
- Instead of, white chocolate bar you can use brown too.
- Take care not to cook the chocolate while microwaving. Stir constantly after every 30 or 20 secs. Otherwise, the chocolate will cook and it will become hard.
