Yet another Kerala delicacy and it is one of the most famous chips in Kerala after Banana chips. We can slice it into thin round wafers and deep fry it directly. But this time I have tried the dried version. The last time when my mom-inlaw came, she gave us two big tapioca. I made kappa masala with that(I will be posting it soon) and reserved one for trying this tapioca chips. Jany and I love this, and we finished it as soon as the photo shoot is over. This can be had as an evening snack along with tea or coffee. Off to the recipe:
Ingredients:Tapioca(Kappa) - 1 (Big Sized)
Salt - as required
Water - to cook the tapioca
Oil - To deep fry
Method:
1. Peel the outer brown layer of the tapioca and cut into into equal sized blocks. Then slit it length wise as shown below. Boil it with enough water, salt for 10 mins and switch off the flame. Strain the water with the colander and allow it to cool.
2. Slice the cooked tapioca lengthwise and spread it in a clean cloth. Dry the sliced pieces in sunlight for 3 to 4 days or until it is dried completely. Then store it in a airtight container.
3. Heat oil in a kadai. When it is hot, fry the dried tapioca in medium flame until golden brown and crispy. Remove from oil and drain it in tissue paper.
