The only raita I have heard and tasted is onion raita until I started to blog. All kinds of Biryani is accompanied with this raita at home. Sometimes mum adds few pieces of chopped tomato and coriander leaves along with the onion raita. After blogging, I learned few more raitas like Boondhi Raita and Carrot Raita. Jany and Happy started showing interest in these varieties and hence I tried this cucumber raita. I am in a rush to finish this post since I am planning to make Palak Paneer and Roti before picking Happy from school. So, without any delay let us move on to the recipe:
Ingredients:Cucumber - 3
Curd - 1 Cup
Cumin Powder or Chat Masala - 1/2 tsp
Salt - as required
Corinder leaves - 1 tblsp(chopped)
To Temper:
Oil - 1 tsp
Mustard seeds - 1 tsp
Curry leaves - few
Green Chilli - 1(Optional)
Method:
1. Wash and peel the skin of the cucumber. Trim and discard the edges. Then chop them into small bite sized pieces.
2. In a mixing bowl, whisk the curd with required salt. Then add the chopped cucumber and cumin/chat masala powders. In a tadka pan, temper it with the items under 'To temper'.
3. Pour the tadka into cucumber curd mixture and mix it well. Finally, garnish it with chopped coriander leaves.
