Happy Independence Day, dear readers!! This is the first recipe I tried in my husband's home after marriage. I got the recipe from one of my colleagues and without knowing anything in the kitchen, I was hunting for ingredients. The cutlets turned out very well and everyone at home was really impressed. My first cooking adventure was a success and I felt proud sharing the recipe with my mom-in law, who is already a good cook by herself. This recipe is spreading in our family circle and I am really happy about this. If interested in mutton cutlet, check that as well. And, here we go for the recipe:

Ingredients:Boneless Chicken - 200 grams(Cooked and shredded)
Potato - 1
Onion - 1
Coriander leaves - few
Green chilli - 1
Ginger garlic paste - 1/2 tsp
Garam Masala - 1/2 tsp
Chilli Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Salt - as required
Lemon - 1/2
Bread crumbs - as required
Egg - 1
Method:
1. Cook the chicken with little salt and pepper powder. Cool it and shred it. (You can mix it once in pulse mode). Cook the potato till it is soft and mash it.
2. In a pan add some oil, then saute the onions until it is transparent. Then add the green chilli, ginger garlic paste and coriander leaves. Then add the cooked potato , along with turmeric, chilli, pepper and garam masala powder. Saute till the raw smell leaves. Now add the cooked chicken and mix everything together, till the masala combines with the chicken.
3. Finally add the lemon juice and mix well, allow it to cool. Then shape it into equal sized small circles. You can cut it into any desired shapes using a cookie cutter or form the circles as we do for vadai.

4. Then Beat the egg with little salt. Dip the cutlets into it and roll it in the bread crumbs and keep it aside for few mins.

5. Then deep fry it in hot oil and drain it in tissue paper.
The yummy chicken cutlet can be had with tomato sauce. It can also be used in burgers.Points to remember:
- You can get ready made bread crumbs or you can prepare it at home. If preparing at home, dry the bread slices and mix it. (Keep the bread slices in the freezer for a few mins and then mix it or You can also toast it in oven and mixie it).
- Adding lemon juice at the end gives a nice flavour to the cutlets.
- Instead of deep frying, you can toast it in tawa.

I am impressed too. How not to after seeing the crispy and tempting cutlets. I can imagine the taste once done with the frying. Will fly within seconds even before taking the pictures.
