This is one of the long-awaited recipes in Happy's Cook. I received many requests from readers to post cake recipe that is baked in a pressure cooker. I didn't get time to bake a cake in the cooker, so I delayed it. Finally, few week's back I tried it and here I am with the procedure. This cake recipe is similar to the Chocolate Sponge Cake which I posted during last Christmas.
When Happy was just 4 months old, accidentally I tried a pressure cooker cake since we don't have an Oven in my home town. It came out very well and mom motivates me to try more. Every week I started to bake a cake, cookies based on mom's request and she likes it. After I come to Chennai, I started to bake in an Oven. Just for posting it here I tried this cake in a very old cooker which mom carries all the way from hometown during her last trip to Chennai. Off to the recipe:
Ingredients:Note: I halved the below mentioned quantity to get 12 piecesAll purpose flour(Maida) - 250 gmsSugar - 250 gramsEgg - 8Water - 25 mlVanilla Essence - 3 mlBaking Powder - 4 gmsSalt - a pinchOil - 38 ml
Method:
1. Sieve the maida, baking powder and salt twice for even mixing. Keep it aside. (I forgot to capture this). Beat the egg, sugar, vanilla essence in low speed until the egg whips up and sugar dissolves. Then add the maida in parts and beat well. Add the water at this stage.
2. Beat everything together for 5 minutes in high speed until the batter is smooth and fluffy.Finally, gently fold the batter with oil. Grease a pan with oil and line it with parchment paper. Pour the batter and tap it gently to spread evenly in the pan. In a wide pressure cooker pan, spread a layer of sand for about 0.5-inch thickness. Then place a steel stand on top of it as shown below.
3. Then place the cake pan on top of it. Close the cooker pan with the lid. (The rubber gasket should be removed before closing the lid). Also, weight should not be used. Heat the cooker in high flame for 5 mins. Then reduce the flame to low and bake it for 40 to 45 mins. Just open the pan and insert a toothpick. If the toothpick comes out clean then the cake is done.

3. Then place the cake pan on top of it. Close the cooker pan with the lid. (The rubber gasket should be removed before closing the lid). Also, weight should not be used. - Rubber Gasket and weight should not be used while baking a cake in pressure cooker. Also, bake it in very low flame for a longer duration to get perfectly baked cake.
- After 35 minutes, keep an eye on the cake. Don't over bake. If overbaked then the cake turns little hard.
- Any cake recipe can be tried in the same way in cooker.
- Finally, while preparing the batter, beat it well in high speed to get fluffy batter, which is the secret for spongy cake. An electric hand mixer works best, but you can also use a hand whisk. If using the hand whisk, beat it for at least 10 minutes.
- This cake has the mild sweetness which we like it the most.
