Rava Ladoo Recipe | Rava Laddu | Rava Urundai | Sweet Sooji Balls

Rava Ladoo is quick and easy to make recipe. This is a no fail recipe, even beginners can prepare it perfectly well. It was in my drafts for such a long time, Yes! I tried it for last Diwali :)  For last Diwali, from Jany's office we received assorted nut box. I preserved and used it for this post :) My blogging mind always thinks about properties that can be used for clicking. I hunted and purchased so many props from Paris as well, which you can see in this space soon. Let's go to the preparation steps:

Ingredients:
Fine Sooji / Rava - 1 Cup 
Sugar - 3/4 Cup 
Melted ghee - 1/4 Cup 
Cardamom powder - 1 tsp 
Broken cashew nuts - as required 
Raisins - as required(Optional)
Method:
1. In a pan add the rava and roast it until nice aroma comes. Make sure not to burn the rava. Allow it to cool completely and powder it smoothly. 
2. Similarly, powder the sugar smoothly.  Mix the powdered rava, cardamom powder and powdered sugar until everything combines well.
3. In a pan add the ghee and roast the cashews, raisins until golden brown. Add this to the rava sugar mixture. Mix it with a laddle and by this time it looks like bread crumbs. Immediately start forming balls by holding it tightly with your hands.
4. If the mixture turns dry, heat little more ghee and add it again. Then start forming balls. 
If your kids crave for any sweets, within 10 to 15 minutes you can serve them this yummy ladoos.
Points to remember:
  • If you prefer, low fat version then replace half of ghee with hot milk. Sprinkle hot milk and form the ladoos.
  • Adding milk reduces the shelf life of ladoos, so I prefer ghee. 
  • Make sure to grind the rava finely. Otherwise the ladoos will not hold its shape for longer time instead it tends to break.
