After a long break, I am posting a baked goodie. Though I bake simple cupcakes for Happy often, I have not clicked anything to post it here. The reason behind that is my laziness. Also, I struggle a lot to click appealing pictures of cakes/bread. Learning food photography is on my to-do list for years now and I am somehow managing the blog with some simple photos. Today I am here with a yummy and delicious banana bread. I couldn't resist myself from trying this recipe after I saw this video in Tastemade.
Last week I made this bread as Happy's after school snack and when I went to pick her, I packed few slices for Happy's teachers. They liked it very much and I got the positive energy to post it here after their feedback. Soon after tasting the bread, Happy told "It's very tasty" before I asked her :). I will be posting a healthy version with wheat flour soon. Check out my plain White Bread recipe and Walnut Banana Muffins too.

Ingredients:All-purpose flour - 1.5 Cups
Vegetable Oil - 6 tbsp
Very Ripe Banana - 3
Sugar - 1/2 Cup
Egg - 1
Vanilla essence - 1 tsp
Baking Powder - 1 tsp
Baking soda - 1 tsp
Salt - 1/4 tsp
Method:
1. Get ready with all the ingredients and mash the banana with a fork or a potato masher. For best results, use extremely ripe bananas. Then add the required quantity of sugar to the mashed banana and whisk it until the sugar dissolves completely.
2. Then add the oil, vanilla essence and egg. Mix everything until it is well combined. Meanwhile, in a separate bowl sieve the flour, baking powder, baking soda and salt once or twice.
3. Add the flour mixture slowly and incorporate it into the banana mixture using a whisk. Don't overmix after this. Prepare the bread pan by greasing it with the oil. Also, dust it with some flour and remove the excess flour completely.

4. Now pour the batter into the prepared mould. Preheat the oven to 175 degrees for 10 mins and bake it for 45 minutes at the same temperature. Insert a toothpick and if it comes out clean then the bread is done.
5. Allow it to cool completely before flipping it to a plate. Slice thick pieces and serve.
The yummy Banana bread can be served as a breakfast or evening snack along with a cup of coffee or milk.
Points to remember:
The yummy Banana bread can be served as a breakfast or evening snack along with a cup of coffee or milk.
- The original recipe calls for vegetable oil. I don't have it at the time of preparation and hence I used Olive oil.
- Preheating and baking temperature varies from oven to oven. So bake it as per your oven type.
- If your banana is extremely ripe(with black skin) then the bread will be too good. You can mash the banana with a fork and leave few bits of banana without mashing.
- You can also add crunchy nuts(walnuts, almonds etc) or Raisins or choco chips for additional flavour.
- The bread is mildly sweet and if you prefer extra sweetness, you can add 1 or 2 tbsp more sugar.
