As I mentioned earlier in my Cheese Corn Sandwich post, I am exploring a lot of sandwiches for Jany's breakfast on weekdays. I have heard about the health benefits of avocado, but Happy and I hate the taste of the avocado. In contrast, Jany likes avocado in any form. Once when I took Happy to a play area, I met an aunty from Serbia. She was talking to me very closely in our first meeting itself. She gave me the idea of an avocado sandwich and then I tried it. I loved it to the core and here I am with the recipe. Off to the simple and filling breakfast recipe:
Ingredients:Avocado - 1
Egg - 2
Wholemeal Bread - 4 slices
Lemon Juice - 1/2 tsp
Pepper Powder - 1/2 tsp
Salt - as required
Butter - to grill/to toast
Method:
1. Boil the egg and remove the shell. Slice the Avocado into half and deseed it.
2. Then scoop the flesh of the avocado, leaving the outer skin aside as shown below. Then chop the avocado and egg finely. Then transfer it to a bowl and mash everything together with a spoon.
3. Now squeeze the lemon, sprinkle the pepper powder and add required stage. Mix it all together and now the filling is ready. Trim the edges of the bread slices and generously apply mayonnaise on all the 4 slices as shown below.

4. Then spread the avocado and egg filling on two slices as shown below. Cover these with the another two bread slices. Grill it in the sandwich maker or you can toast it in the tawa by spreading a little butter.
Serve the healthy and filling sandwich for the breakfast. I served it with strawberry milk, cubed watermelon and a cheese.

Points to remember:
- Sometimes I serve the sandwich without grilling or toasting. It tastes equally good. It will be like a salad and I use a lettuce leave on top of the egg avocado mixture.
- While adding salt, be extra careful since the mayo has enough salt.
- If you don't prefer mayonnaise then you can skip it. Also, you can replace it with greek yogurt or hung curd.
