A healthy quick breakfast dish or evening snack made using Idli batter readily available in the fridge. I had this kuzhi paniyaram in my friend's place twice, but never had an idea about how it would be prepared. Once I was googling some recipe with Jaggery, I came across this sweet and savory paniyaram. From that day onwards it is one of our week's menus. It is simple and easy to make if we have Idli batter and paniyaram pan. My husband loves this paniyaram and he even adds saying it tastes like ulunda vada,which is one of his favorites.
Ingredients:
Idli/Dosa Batter - 1 Cup
Onion - 1 medium sized
Green chilli - 1 or 2
Carrot - 1(Grated)
Coriander leaves - few
Ginger - 1/2 inch chopped finely
Asafoetida - a pinch
Salt - as required
For Tempering:
Oil - 1 tsp
Mustard - 1 tsp
Urad dhal - 1/2 tsp
Method:Curry leaves - few
1. In a pan heat the oil, add the mustard seeds, urad dhal and curry leaves. Allow it to crackle.
2. Add the chopped onions and saute until onions are tender. Now add the grated carrot, green chilli, ginger and give a quick stir. Switch off the flame. Cool the masala and add it to the Idly batter. Sprinkle a pinch of asafoetida and mix the batter well. Can add little water if the batter is too thick. But don't bring it to dosa batter Consistency.
3. Heat the Paniyaram pan and sprinkle oil/ghee in the holes. Then pour a spoonful of batter in each hole. (Fill only 3/4th of the hole). Cover cook in medium flame for few mins. Once it is almost cooked, flip the paniyaram and cook the other side.
The yummy Kuzhi paniyaram can be served with chutney or sambhar.
