Kalan Recipe | Raw Banana and Yam based yogurt curry | Kurukku/Katti Kalan | Onam Sadya Special

Finally, I am winding up my Onam Sadya recipes with this Kalan post. This is also an important item in the Onam Sadya. Usually, it is made using firm vegetables like raw banana (pacha Kaya) and yam (chena). The consistency and the combination of the kalan are changed according to the occasion. For the Onam Sadya, they make the kalan a little thick with sour curd and it is called as katti kalan or kurukku kalan. (It should not run from the place where it is placed). Other days, they make it a little runny (pouring consistency). Check out the other Onam Sadya recipes too. Let us see the preparation steps:

Palada Pradhaman Recipe | Palada Payasam | Kerala Palada Pradhaman | Onam Sadya Special

Happy Onam to all my friends and readers!! Hope you all liked my Onam Sadya recipes. I am a great fan of Ada Payasam's and I always wanted to make ada at home. At least, by next Onam, I should be ready with homemade ada. Last week when I visited nearby Indian shop, I saw a variety of ada and I immediately picked this to try the palada pradhaman.  It is a simple and easy to make pradhaman with just milk, ada and sugar as main ingredients.  I already have posted the Ada Pradhaman (jaggery based payasam), do check it out. Let us move on to the recipe:

Sambaram Recipe | Kerala Spiced Buttermilk | Moru Vellam | Pacha Moru | Onam Sadya Special

This year I was planning to post the consolidated Onam Sadya recipes a week before the Onam. So that it helps everyone to plan the menu in advance. However, as always I am rushing at the end to post the recipes. I have few more sadya recipes in drafts which should come live as early as possible. At least for the next sadya it will be helpful :).
Today's post is about a simple and refreshing drink made using buttermilk. Mom used to make this for my dad on weekends. Jany too tasted it once and he liked it. From that day onwards whenever we visited hometown, this will be there for him along with lunch. The ginger and the shallots give a nice flavour to the buttermilk. Do give it a try for this Onam. Check out my collection of Onam Sadya Recipes here. Let us move on to the recipe:

Pineapple Pachadi Recipe | Coconut & Yogurt based Pineapple Raita | Onam Sadya Special

This is one of my favourite Sadya dishes and I was delaying to post it here since the pictures were not appealing. Maybe, when I make it next time I should update the picture. Last week, I made this and I shared it with my Malayali friend Neena. She told the pachadi is very tasty and it is similar to the one she used to have in Kerala. The sweet pineapple, tangy curd and the chilli coconut paste makes the pachadi very addictive and do give it a try for this Onam. Check out my Beetroot Pachadi, Cucumber Pachadi and other Onam Sadya recipes too.

Mambazha Pulissery Recipe | Mambazha Moru Kootan | Mambazha Kalan | Ripe Mango in a Yogurt Curry | Onam Sadya Special

Yet another Onam Sadya special recipe and it is a traditional Kerala delicacy that is made using ripe mangoes. The mambazha pulissery is a sweet and sour curry where ripe mango is cooked along with coconut and yogurt based curry. The sweet and sour curry sounds little different for the people who have not tasted it before. However, trust me and try this super delicious curry. We all loved it to the core and it is worth giving it a try. Check out my moru curry, Parippu curry and other Onam Sadya Recipes here. If interested in Mango recipes, check out my Mango Icecream and Mango Panacotta too.

Beetroot Thoran/ Beetroot Poriyal Recipe/ Beetroot Stir fry

This is one of the very simple and easy to cook vegetables. Initially, I hate almost all the stir fry/Poriyal I make with cabbage, beetroot, carrot, beans ,etc. Later I found out that I overcook all the veggies adding more water. Now I have corrected myself and the Poriyal's I make comes out excellent. In my opinion, veggies should not be overcooked and it should be crunchy. It should be cooked by sprinkling less water and within a few minutes, it should be removed from the flame. Grating beetroot helps me cook fast and here we go for the recipe of the fastest Poriyal :)
