As mentioned earlier in my posts, I love Jackfruit and it is one of my favourite fruits. We have jackfruit tree at my home in native and hence I am exposed to all kinds of dishes that are made with jackfruit. It is not easy to get Jackfruit seeds in Sydney. However, once I was able to get a piece of Jackfruit from the Indian grocery store and I preserved the seeds to try some recipe. Today I am sharing an aviyal recipe made using jackfruit seeds. Ingredients:Jackfruit seeds(chakka kuru) - 15
Drumstick - 1
Salt - as required
To Grind:
Coconut(grated) - 1/2 Cup
Cumin Seeds - 1 tsp
Green Chilli - 1
Turmeric Powder - 1/4 tsp
Chilli Powder - 1/2 tsp
Garlic - 3 cloves
Curry leaves - few
To Temper:
Coconut Oil - 2 tsp
Mustard seeds - 1/2 tsp
Method:Curry leaves -few
1. Soak the jackfruit seeds in water for about 2 hours. Scrap the outer brown skin and chop it into two pieces. In a pan, start boiling the jackfruit seeds in water.
2. When the jackfruit seeds are half cooked, add the chopped drumstick pieces and boil it. Meanwhile, grind the items under 'To Grind' to a rough paste.
3. When the jackfruit seeds and drumstick becomes soft, add the ground coconut masala. Add required salt at this stage and cook until the raw smell of the masala leaves. Temper it with the items under 'To Temper' and pour it cover the aviyal.

3. When the jackfruit seeds and drumstick becomes soft, add the ground coconut masala. Add required salt at this stage and cook until the raw smell of the masala leaves. Temper it with the items under 'To Temper' and pour it cover the aviyal.
- The jackfruit seeds take approximately 10 to 15 minutes to cook and it is varies based on the seed.
- Make sure not to overcook the seeds and make it mushy. You can add chopped shallots along with the drumsticks.
- Adjust the spice levels as per your preference.
- To preserve the jackfruit seeds at home, just wash the seeds after eating the jackfruit and sun dry it for few days. While using it aviyal, peel the outer white skin and then scrap the inner brown skin as well.
