Any mixed rice/one pot rice come in handy for our busy morning hours. We can pack an amazing lunch box if we make a simple side dish to go with this rice. Today I am sharing the recipe for the flavourful Capsicum rice/Pulao. I will be consolidating all the mixed rice recipes from the blog in a separate post for easy reference. Do check out my red capsicum chutney, which is a huge hit on the blog and at home. Off to the recipe:
Ingredients:Basmathi Rice(Cooked) - 3 Cups
Capsicum(cubed) - 1 Cup(I used mixed colors)
Onion - 1/2(chopped lengthwise)
Green Chilli - 2(slitted)
Ginger - 1 tsp(crushed)
Soy Sauce - 1.5 tsp
Pepper Powder - as required
Salt - as required
To Temper:
Oil - 2 tsp
Cumin seeds(jeera) - 1 tsp
Method:
1. Chop the capsicums and the onion as required. Crush the ginger and keep it ready. Cook the basmathi rice and allow it to cool. In a wide pan, add the oil and roast the cumin seeds. Add the crushed ginger and saute it for a minute.
2. Then add the sliced onions and cook until transparent. Add the slitted green chilli and the capsicum pieces. Saute it all together for another 1 minute and add soy sauce by keeping the flame in high.
3. Add the required pepper powder and salt. Finally, add the cooled rice and mix it well without breaking the rice grains. Switch off the flame.
2. Then add the sliced onions and cook until transparent. Add the slitted green chilli and the capsicum pieces. Saute it all together for another 1 minute and add soy sauce by keeping the flame in high.
3. Add the required pepper powder and salt. Finally, add the cooled rice and mix it well without breaking the rice grains. Switch off the flame.
- The capsicum should not lose its crunchiness and hence make sure not to overcook it.
- For a little different flavour, skip the soy sauce and you can add 1/2 tsp of garam masala.
- Adjust the spiciness as per your preference. Green chilli can be replaced with hot chilli sauce.
