I was planning to post some Onam Sadya recipes from this Monday since I have clicked few interesting Sadya recipes recently. Being very busy throughout the week, I was struggling to finish this simple post for the past three days. Finally, I made my mind for finishing this post before I sleep today. So let us move on to the recipe without much ado. Check out my other thoran recipes like Cherupayar thorn(green gram thoran), Beetroot thoran , Kadachakk thoran and Cabbage thoran too , for planning your Sadya menu.
Ingredients:Carrot - 1 Cup(chopped finely)
Beans - 1 Cup(chopped finely)
Onion - 1 Grated
Grated Coconut - 1/4 cup
Green Chilli - 2(Slitted)
Turmeric Powder - 1 tsp
Salt - as required
To Temper:
Coconut Oil - 2 tsp
Mustard Seeds - 1/2 tsp
Curry leaves - few
Urad dal -1/2 tsp(optional)
Method:
1. Chop the carrot, beans and onion finely. In a pan, add some coconut oil and allow the mustard seeds and curry leaves to crackle. Add the urad dal too. Once it turns golden brown, add the chopped onions and slitted green chili.
2. When the onions are transparent, add the chopped carrots and beans. Add required salt and turmeric powder. Sprinkle little water and cover cook until the veggies turn soft.
3. When the veggies are soft, add the grated coconut and mix it all together. Heat it a little until the raw smell of the coconut leaves and switch off the flame.

Serve the yummy thoran with Parippu Curry or Moru Curry. On the day of clicking, I served it with Fish Kuzhambu since it was a Saturday.
- Don't overcook and make the veggies mushy. It should be cooked until it is soft. Just cook the veggies by sprinkling water now and then.
- Instead of grated coconut and slitted green chilli, you can grind the green chilli and coconut along with Jeera and add it to the cooked veggies.

All these thoran's remind me of the food from Nagercoil.. We indeed use a lot of coconut.. Hope you would agree with me on this..
