I don't prefer chocolate flavoured ice-creams when compared to fruit flavoured Popsicle. For the summer heat, I just rely on the popsicles and whenever I have excess fruits at home, I transfer it into a popsicle and relish it every day after lunch. My favourites among the popsicle are Mango Popsicle, Rosemilk Popsicle and I make it often. However, during the last strawberry season, I made this two layered popsicle and it was a hit at home. Ingredients:Strawberries - 10 to 15
Sugar - 4 tbsp(adjust as required)
For the Yoghurt layer:
Thick Creamy Yoghurt - 1 Cup
Strawberry Jam - 3 tbsp
Method:
1. Clean and wash the strawberries. Remove the green leafy portion and chop it roughly. Transfer it to a blender, along with the sugar and a little water. Puree it finely.
2. Pour the strawberry puree into the popsicle mould until it is half filled. Then freeze it for 2 hours, so that the strawberry layer starts to set. If using the lid of the mould as stick then cover it and freeze it.
3. Meanwhile, prepare the yoghurt layer by mixing the yoghurt and jam. Then pour it on top of the already set strawberry layer.

4. Freeze it for 1 hour. If you are using the popsicle sticks, then remove the mould from the freezer and insert the stick. Freeze it again for 6 hours or overnight.
Demould it by showing it on the running water. Serve the delicious popsicle to beat the summer heat.

- As a healthier option, you can replace sugar with honey.
- Adjust the quantity of the sugar and strawberry jam based on the sourness of the strawberry and yoghurt respectively.
- I used creamy greek yoghurt and you can use hung curd too. You can prepare the hung curd by hanging the homemade yoghurt on musline cloth for few hours and squeeze the excess water.
