Ribbon Pakkoda / Ribbon Murukku / Ola Pakkoda / Nada Thenkuzhal | Diwali Special Recipe

Finally I am posting in the Day one of new month with many resolutions in mind :). This post was composed last week during diwali because of internet issues I couldn't post it. Jany prefers to have crispy savoury snacks than sweets or desserts. Whenever I make sweets he tastes it, but asks for something spicy and crispy. So, I made this ribbon pakkoda in a jiffy without much preparation. It came out really well and he enjoyed for the evening coffee. Here, we go for the recipe:
Ingredients:
Rice Flour(Idiyappam Flour) - 1 Cup
Besan Flour(Kadalai maavu) - 1/2 Cup
Split gram flour(Pottukadalai maavu) - 3 tbsp
Butter - 1.5 tbsp
Sesame seeds - 1/2 tsp
Garlic paste - 1 tsp
Chilli Powder - 1 tsp
Oil - to deep fry
Salt - as required
Method:
1. Grind split gram into a very fine powder. In a wide mixing bowl, add the Idiyappam flour, besan flour, split gram flour, chilli powder, butter, sesame seeds, garlic paste and required salt.
2. Add water little by little and form a soft stiff dough. Take the press with desired pattern inserted and then fill the press with the dough. Meanwhile heat oil in a kadai. Once it is hot enough, press the dough starting from the edge towards the center.
3. Fry it in medium flame and once it turns golden brown, remove and drain it in tissue paper.(you can fry until the shhhh sound stops)
Serve the spicy and crispy pakkodas for evening coffee. When making it in bulk, prepare the dough in batches to prevent it from drying. Store it in air tight containers.
Points to remember:
  • Freshly ground pepper can be used for lovely flavour.
  • Prefer to use fine quality and smooth flour.
  • Fry in hot oil and if it is not hot, it will drink more oil.
Warm Regards,
